This coffee was produced by our long-time supply partners the Borré family at Progresso farm, a beautiful property situated in Brazil’s Chapada Diamantina mountain range. This microlot is named Airumá after the full ‘starry sky’ that we enjoy every time we visit Progresso farm – the most spectacular display of stars we’ve ever seen.
The Borré family are deeply committed to the protection and preservation of the natural environment of their farm and its surrounds. Their water is sourced from a nearby lake and is carefully conserved, and coffee pulp from processing is used as organic fertiliser on the farm. Over 50% of the property is preserved as native land; a significantly higher amount than the mandated national minimum of 20%.
In the cup, Airumá has all the qualities we seek out and adore in the Borré family’s coffees – it’s approachable, well-structured and balanced with a creamy body and a lovely milk chocolate sweetness.
